Following the footsteps of the Estonian writer August Gailit´s most famous character Toomas Nipernaadi, the restaurant head chef Rando Volkov has travelled around Estonia and gathered culinary inspiration by meeting local Estonian farmers and fishermen who produce foods with responsibility and utmost care. In addition to local suppliers, we source lots of our vegetables, herbs, meat, forest berries and wild mushrooms from our Vihula Manor’s eco farm in Lahemaa National Park.
The menu is simple and made of fresh, seasonal, mainly local ingredients making it tasty and unique. The ingredients come from different parts of Estonia: fish from Lake Peipsi and Pärnu Bay, vegetables, herbs and salads from Vihula Manor and Kopra Cattle Manor, chicken from Northern Estonia, beef and pork from Southern Estonia.
Toomas Nipernaadi travelled around Estonia and told stories with the aim of getting people to dream and see things differently. We also wish that you could see simple Estonian ingredients in a new perspective and understand the journey that contributes to creating each dish. To enrich your dining experience, do not forget to try our carefully chosen selection of specialty fruit wines, beers and vodkas, brewed in local breweries and distilleries.
